Veggie Egg Frittata


3 Cups Egg Whites or 12 Medium Eggs

2 Handfuls Fresh Baby Spinach

1 Red Pepper

1 Small Red Onion

(substitute any veggies you prefer & try new ones to mix it up)


Set oven to 400 degrees

Dice Red Pepper & Onion and lightly saute in oven safe pan over medium heat until slightly softened

Crack & Beat Eggs to a scramble (if using whole eggs)

Throw in spinach & wilt slightly

Pour eggs over veggies in pan, let set slightly

Bake for 13 to 15 minutes until eggs are puffy

(Makes 8 Servings)
